Koreo Farm premium quality, dry aged beef


Our recommended butchers dry-age our beef for 10-14 days - resulting in tender, natural and intensely flavored cuts with superior texture and flavor. 

Most beef purchased through traditional grocery stores has been “wet aged”, which means it has been cut and packaged right away and aged in its own juices.  This method doesn't have the same beneficial effects that dry-aging has on texture and flavor. Additionally, in the end, you pay more for the weight of the extra liquid content in the meat.

We take care of contacting your chosen butcher and arranging a harvest date. We, then transport the animal from the farm to the facility at NO ADDITIONAL CHARGE. 

It is important to note that both of our chosen processors are within a half an hour of the farm.  This short distance in transport means reduced stress on the animal, contributing to a better quality meat.



Quarter, Half and Whole Beef

No matter what share size you choose, you always have options.  How thick do you want your steaks?  What style roasts you want?  Which cuts would you would like ground into burger? These are some of the choices you have when customizing your own personal cattle portion!  

Don’t worry, your processor will walk you through this process and help you choose what is best for your family!  The butcher will help you decide what cuts you want and how you want them packaged.

 

Quarter Beef:   

The average final packaged beef weight of a quarter has historically been around 80 pounds of beef. The average hanging weight (HW) is about 150 pounds.**  THIS CAN VARY GREATLY FROM ANIMAL TO ANIMAL.

Will take up to 25% of a large, (20 cu.ft) freezer.  May be able to fit in a standard refrigerator freezer.

Quarter Beef Share - $175 deposit required for reservation

*Pricing:  $2.50 per HW pound to Koreo Farm, then approximately $.75 per HW pound to butcher for cut, vacuum pack & flash freezing, plus a $17.50 harvest fee.  (Based on stated weights above, the total cost per pound for your finished beef would be approximately $6.35)

 

Half Beef: 

The average final packaged beef weight of a half has historically been around 170 pounds of beef. The average hanging weight (HW) is about 300 pounds.**  THIS CAN VARY GREATLY FROM ANIMAL TO ANIMAL.

Will take up to 50% of a large, (20 cu.ft) freezer.

Half Beef Share - $250 deposit required for reservation

*Pricing:  $2.30 per HW pound to Koreo Farm, then approximately $.75 per HW pound to butcher for cut, vacuum pack & flash freezing, plus a $35 harvest fee.  (Based on stated weights above, the total cost per pound for your finished beef would be approximately $ 5.60)


Whole Beef:  Our lowest price per pound.  The best value with the most variety!

The average final packaged beef weight of a half has historically been around 300 pounds of beef. The average hanging weight (HW) is about 550 pounds.**  THIS CAN VARY GREATLY FROM ANIMAL TO ANIMAL.

Will take up most of a large, (20 cu.ft) freezer.

Whole Beef Share - $375 deposit required for reservation

*Pricing:  $2.00 per HW pound to Koreo Farm, then approximately $.75 per HW pound to butcher for cut, vacuum pack & flash freezing, plus a $70 harvest fee.  (Based on stated weights above, the total cost per pound for your finished beef would be approximately $ 5.30)
